Can the volume knob indicator light be turned off?

Yes. Long press the volume knob for about 2 seconds to turn the knob light off.

How do I change the volume knob indicator light color?

Long press the volume knob for about 4 seconds to switch knob light color.

The knob light will cycle: orange-yellow → cyan → mint green → rose → red → purple → white → yellow → blue → green → off. Each color lasts for about 2 seconds.

Keep holding the knob; release when you see the color you want to select it.
